Banana Chia Seed Breakfast

For Meatless Friday and not only, try this nutritious and tasty recipe.

Ingredients:

– 50g chia seeds
– 1/4 teaspoon of salt
– 2 teaspoons of cinnamon
– 4-5 dates
– 1 tbsp vanilla powder
– 1 sliced banana
– 2 egg yolks
– 350-400g coconut milk

How to prepare:

Warm the coconut milk in a pan and, when it reaches the boiling temperature, put aside 250g of it and mix with the two egg yolks in a bowl.

Mix well and add the obtained cream in the rest of the milk. Leave to medium heat for about 5 minutes, stirring continuously.

Careful: Composition doesn’t have to boil, just to get thick.

Put the hot cream in a blender, add bananas, dates, vanilla, cinnamon and salt and mix for 2-3 minutes. Add chia seeds and mix again.

Put everything in the refrigerator and leave it overnight. Serve with banana slices and fried nuts.
