Banana Chia Seed Breakfast

For Meatless Friday and not only, try this nutritious and tasty recipe.

Ingredients:

– 50g Chia seeds
– 1/4 teaspoon of salt
– 2 teaspoons of cinnamon
– 4-5 dates
– 1 tbsp vanilla powder
– 1 sliced banana
– 2 egg yolks
– 350-400g coconut milk

How to prepare:

Warm the coconut milk in a pan and, when it reaches the boiling temperature, put aside 250g of it and mix with the two egg yolks in a bowl. Mix well and add the obtained cream in the rest of the milk. Leave to medium heat for about 5 minutes, stirring continuously. Careful: Composition doesn’t have to boil, just to get thick. Put the hot cream in a blender, add bananas, dates, vanilla, cinnamon and salt and mix for 2-3 minutes. Add chia seeds and mix again. Put everything in the refrigerator and leave it overnight. Serve with banana slices and fried nuts. A real delicé!

Blueberry Chia Pudding

Tasty and with a lot of health benefits, this breakfast is absolutely wonderful to start your day. And yes, it’s as good as it looks.

Ingredients:

– 2 teaspoons of honey (or other sweetener)
– 8-10 raw almonds, cut into small pieces
– 2 tablespoons of chia seeds
– 240ml almond milk
– frozen or fresh blueberries

How to prepare:

Put the milk, chia seeds, honey and blueberries in a jar/mug and mix well. Place the jar in the refrigerator for several hours or overnight. Just before eating the pudding, cut the almonds into small pieces and put them in the pudding.

Buckwheat Pudding

A tasty breakfast alternative especially if you are intolerant to gluten.

Ingredients:

– cinnamon
– 1/2 thin sliced banana
– 240ml of water
– 60ml soy milk
– 45g of buckwheat
– nuts

How to prepare:

Grind the buckwheat (with a spice grinder) for a few seconds. Put to boil the buckwheat, water and milk, stirring occasionally. Leave it boil over small fire for 4 minutes. Add the banana and continue mixing for another 2-3 minutes. Take the pudding off the fire and serve it with a cinnamon powder and a few chopped nuts. You can even add a teaspoon of butter.

Greek Yogurt Brulée

Ingredients:

– almonds
– 2 tablespoons of honey
– fresh berries
– 2 tablespoons of granulated sugar
– 600g Greek yogurt

How to prepare:

Split the amount of yogurt into two separate bowls. Above yogurt, sprinkle 1 tablespoon of sugar and 1 tablespoon of honey. With great care, melt the sugar with a grill lighter until it starts making bubbles (5-10 seconds). Serve with fresh fruit.

Muesli with Oat Flakes, Chia Seeds and Cinnamon

Ingredients:

– milk
– 1/4 green apple, chopped
– 1/4 teaspoon of cinnamon
– 1/2 teaspoon chia seeds
– 1/2 teaspoon of sunflower seeds
– 1/2 teaspoon pumpkin seeds
– 1/2 teaspoon goji berries
– almond milk
– gluten-free oat flakes
– 1/2 teaspoon of raisins

How to prepare:

Mix well all the ingredients and enjoy it as a breakfast/snack.

Scrambled Eggs with Avocado

Ingredients:

– 1 slice of bread
– freshly ground black pepper
– sea salt
– 1/2 avocado, peeled, cut in pieces
– olive oil
– 2 eggs
– butter

How to prepare:

Beat the eggs with a fork until homogeneous. Heat butter and olive oil in a pan, and when they start making bubbles, add the eggs. From time to time, push gently with a spatula from the edges to the middle of the bowl so that the crumbling part goes to the bottom. Do this until the eggs are almost done. Add the avocado pieces and fold the omelet (half). You can turn off the stove. Sprinkle a little salt and black pepper.
